ORGANOLEPTIC DESCRIPTION

Aroma: Soft, caramel, tea rose, red fruits.

Flavour: Fine, elegant, white grape, red apple, flower, red currant, green tea, lemon.

HISTORY OF THE FARM:

Don Andrés Figueroa López acquired his farm in 1998. He has been cultivating coffee since this time with the help of his wife and children. Thanks to their hard work and dedication, the farm has become one of the most famous for the quality of its coffee in Dipilto.

Wilmer adn Alex Figueroa, his sons are managing the culture and process of the coffee in the wet mill of the farm. 4 permanent employees are now working in the farm and up to 60 during the crop season.

AGRONOMIC CONTROL

Fertilization of the farm: 2 per year - combined with pruning, fumigation, parasite control and constant disease monitoring of the farm during the year.

PROCESS

The process of the coffee is also manged and controled by the family. The coffee is processed in the wet mill that was built specifically in the farm with the necessary machines and material to take care of the coffee cherry right after it is picked from the tree.

The time of fermentation can vary from 12h to 48h depending on the climate condition. Then, the family uses a method called "dry depulping" (without use of water) to reach the required quality standards.

The beans are then brought to the dry mill. The beans will be dried, selected and prepared for the exportation.
